Story Our ham starts with our secret cure, rubbed generously into the meat. The cure is allowed to set in for several days, then off to the aging house. Here they will age for 12 months. Keep in mind most commercial hams are aged only 3-4 Months at best. Very few companies age for longer than 3 months, due to loss of weight from the aging process. The longer aging process has the same effect on the ham as it would for a fine bourbon. Simply put, the longer you age it, the better the ham. If you have never had a country ham, you owe it to yourself to try one. Our hams are known for their full flavor, and mild saltiness, similar to prosciutto for you Northerners, but better!
