About Acadia is a cafe in Wallingford serving bowls, sandwiches and seasonal salads, craft beer and wine. We offer coffee, espresso, and pastries for breakfast. Story Established in 2016. Acadia is named after the Acadiana region of southern Louisiana, an area populated by Canadian settlers in the 1700s. The Acadians' descendants are today's Cajuns, whose vibrant culture heavily influences the folkways, music and cuisine of the surrounding Gulf Coast. From the menu to the décor, our concept reflects our deep admiration for the Acadians and their impact on American history.
