Truly a pan-Asian fusion of cuisine, culture and history! An Introduction to Eriteran Cuisine Shahan ful is usually simplified to ful and is a common Eritrean dish that is generally served for breakfast. It is made by slowly cooking fava beans in water then crushing them into a coarse paste. It is often served with chopped green onions, tomatoes, hot green peppers, as well as yogurt, feta cheese, olive oil, lemon juice, berbere (special Eritrean spices), and cumin. It is typically eaten with your hands and a bread roll. It can also be eaten with injera (flatbread made from teff, wheat, or sorghum). Injera is a yeast-risen flatbread with a unique, slightly spongy texture. Often made out of teff flour it is a national dish in Eritrea. Berbere is a spice mixture whose ingredients usually include chili peppers, garlic, ginger, dried basil, korarima, rue, white and black pepper, and fenugreek. More to come soon! Keep checking back!
