About Unique flavors, textures, ingredients and colors in Japanese fusion. We have traditional Japanese sushi as well contemporary fusion dishes. Starting in 2009, executive chef Stanley has created a unique omakase menu that is tailored to our guests. Story iSushi has been creating inventive sushi here in Castro Valley since 2000. Executive Chef and owner Stanley Chan has been in the restaurant business since 1982. The chef believes in starting with the freshest ingredients, then creating flavorful dishes by combining Japanese, French, California styles. Today, iSushi offers California and French style sushi with his unique style of flavors.
