About Specializing in central Texas style barbecue. Smoke Sessions Barbecue is open 6 days a week and available for catering and large events. Story Chad started working in the restaurant business at the age of 14. After years of cooking and catering several types of food, it was barbecue that always captivated him. After all, how could something as simple as cooking meat with fire be so complex at the same time? After many years, Chad finally mastered the art of central Texas style barbecue. Chad has taken his passion for smoked meats and knowlege of the catering business, and put them together to form Chad's Barbecue. Chad takes great pride and care when smoking meats, that have been simply seasoned with mostly salt and pepper, low and slow over a post oak fire. This results in a deliciously tender and moist meat that is smokey and rich with flavor. Although Chad offers a signature homemade sauce, Chad believes that the flavor of the meat should stand out on its own and not be masked with sauce. Chad's Barbecue can stand up to that challenge, but his homemade sides are just as noteworthy as the meat. Chad has spent a lot of time in the kitchen honing in on the perfect potato salad, coleslaw, and bean recipes. Chad believes that it would be a disservice, and downright disrespectful, to his customers to serve premade, storebought sides from a container.
