About Thuy Nguyen has been in business since 2007 when she owned The Cafe at The Pavilion. Summer of 2010 we were able to move down town and open Rooster's cafe. Thank you for all your help in keeping us afloat! Story We use Poverty Bay Coffee, which is organically shade grown, direct trade from Poverty Bay South America. Poverty Bay Coffee company is Seattle locally owned. We have fresh baked goods that are cafe made. We also specialize in home made hearty soups, salads, and sandwiches.
