The Saturday that I was there their air conditioning was broke down and it was hot stuffing people were sweating it just look at the experience I'm looking for

Since moving to the western side of the state I NEVER get good catfish.  I have traveled all over the nation and the only area that makes good catfish is within 150 miles of Memphis.  Hydes is by far the best catfish I have found in that area.  Most places don't cook fish enough.  Many places dont clean the fish properly.  One of the tell tale signs is making the fillets too big.  But the fish here is always crispy, done, and fresh tasting.  Sides and fixins are always good too.
