Baking pie was always a frustrating challenge for me. That flakey crust thing just never worked quite right. Year after year I tried until one day... Eureka!!! A flakey delicious pie crust was born in my own kitchen! Once I produced one, I couldn't stop! I suddenly LOVED making pies... all kinds. Friends said, "fabulous, unbelievable, the
best I ever ate but....... PLEASE we can't eat any more pie! Why don't you go try to actually SELL them to someone else?" So...... Joan's Perfect Pie was born. I moved out of my homey little kitchen into a commercial kitchen, got licensed and actually started selling pies. Baking the perfect pie has now become one of the great pleasures in my life.
