Enjoy the authentic New Mexico and Southwest dining choices offered by La Rosa Southwestern Dining, a new and rapidly rising star offering an exciting culinary experience in lovely Palmer Lake, Colorado. "It's all about the chili," says co-owner Marina La Riva, whose family heritage of fine southwest cooking is incorporated and reflected in La Rosa's authentic menu. If you love Mexican food, take note -- La Rosa is simply not more of the same. Whether it’s piping hot caldillo (green chili stew with white beans and fork-tender pork), pork adovado, cumin-rubbed lamb tacos, authentic tres leches cake or one of their well-chosen ice-cold Mexican beers, La Rosa’s offerings are truly a ‘breed apart’ from other area Mexican restaurants. Set in a lovely old adobe home, the cantina-style bar features posters of old Mexican cinema classics, while the understated and casually elegant dining room offers rustic wood tables and a mixed-media offering of the local art community, including hand-made stained glass panels. La Rosa’s cantina also features a wide variety of upper-crust and sometimes offbeat tequilas, a truly connoisseur experience for the well-educated tequila aficionado, all handpicked by co-owner Mike Elliott. Take their ‘tequila world tour’ and sample tequilas others have only heard or dreamed about. With such a wonderful selection of tequila, you also also want to try the house Margarita, a perfect handmade blend of lime, agave and tequila. La Rosa is not to be missed if you live in or are traveling through the Front Range region of Colorado. La Rosa does not accept reservations, so come early for a great seat. 719-368-7676.

I really like the food. Been here several times and have enjoyed everything that I have tried. The chips and salsa are great. Thick, crisp chips and salsa with black beans. Better than the typical tomato based salsas. They also have 3 or 4 different sauces and will bring you a sampler, if you ask. I love the pork dishes.

Great menu - variety of dishes. Flavors were excellent. I recommend the Mahi tuna street tacos. Good atmosphere and friendly staff. Highly recommend.

This place is a treasure. Easily the best Mexican/Southwestern food I have ever eaten. Every single dish was delicious and each with its unique taste. This is Mexican food as fine dining. Wonderful experience all around.

Good food. Make reservations on Friday and Saturday. It is small and gets full quickly.
