Proof on Main in downtown Louisville’s acclaimed 21c Museum Hotel is a favorite for locals and visitors alike. Through partnerships with Woodland Farm and regional producers, executive chef Mike Wajda highlights the bounty of the Ohio River Valley with plates infused with local flavor. We were in town to help some friends move into their new apartment and went to Proof on Main for dinner. The ambiance was very nice and it felt like a really upscale but very welcoming to four people who had been moving furniture for hours. Our server, Lou, was great, very friendly and personable and explained the food sources (mostly local and from their own farm!) and menu very well. There's a huge drink list and a number of local brews to choose from. We had the charred octopus, whipped ricotta, and bones as apps. The octopus was slightly on the salty side, but were very good, slightly charred but still tender. The whipped ricotta was served with bread and was delicious. And the bone marrow was fatty and meaty and just great, served with a refreshing green salad and carrots. For dinner, I had the beef option, which turned out to be strip steak with crispy potatoes and mushrooms. The steak was melt-in-your-mouth medium rare with a beautiful char. The potatoes were really awesome, thinly sliced, stacked and served in a rectangle of crispy, creamy goodness. For dessert, I went with the Key Lime Bar, great tang from the lime, and the crust was crunchy but overly so. A wonderful meal and definitely a place we'll be visiting again.

Amazing!!! I had the grilled ham and cheese with the house lemonade, which sounds much more bland than it tasted! It was honestly the best meal I’ve ever had. The atmosphere was funky and original while maintaining a fancy aura. The museum was a great mix of traditional art and new age modern. The bathrooms (especially the urinals according to my dad) can be off putting, but I loved it. 100% will recommend, and next time I’m in town this will be my first stop in Louisville!

I have been to Proof a handful of times and adored it but not this time. It was a Tuesday night and should've been able to get a table. Had friends in from out of town and had been telling them about it. Got there to find that the dining area was completely off limits due to what looked like a wedding party. How? No other seating and the bar was full and uncomfortable to have dinner in. Ended up going to Hamburger and Mussels and had a wonderful time. Guess we'll go there next time.

Very swanky place! Drinks were good. Service was certainly sub par. It was late, around 11pm when we dropped in for a capstone to the evening, perhaps servers were tired?? For an $18 drink, you would want better service regardless of time of day.

In Louisville for work and had the pleasure of stopping in this restaurant for brunch on a Saturday. AND I’M SO GLAD I DID!!! The food was AMAZING and the service was impeccable! Not to mention there is a beautiful gallery attached to the restaurant!! This is a must experience place if visiting Louisville
