Story

République, located in mid-city, is owned by Chef Walter Manzke and Chef Margarita Manzke along with their partner, restaurateur Bill Chait. Centered in the heart of Los Angeles, the iconic building was originally erected in 1929 as Charlie Chaplin’s offices, which were then transformed into La Brea Bakery and Campanile. République builds on this storied past with its latest incarnation, offering the public a gastronomic environment of history and grandeur, featuring open kitchens and a bakery, charcuterie counter and raw bar. The space has been restored with original fixtures, period lighting, bar stools and reclaimed wood tables using materials from the same decade that the building was originally erected, while preserving and highlighting the classic architecture from the 1920’s structure.

This gem of a restaurant is the BOMB! We absolutely loved it our first visit on Friday, and brought friends back on Sunday. Sticky Bomb pastries, are you kidding? There is nothing more yummy in the world. And the menu is expansive. Unique, perfect breakfast or brunch...yep. Incredible sandwich and juice/vege drinks for lunch...yep. The most amazing steaks and chops and pork cuts aging in the window for a fabulous dinner...check. The only thing they are missing is a hotel upstairs to nap between meals. Oh, and the setting, feels like a Parisian sidewalk cafe. This place is awesome! Yes, you will wait 20 minutes minimum in line, but honestly you would really wait an hour because it is that good!

Absolutely delicious and really enjoyed the atmosphere. Definite focus on experiencing it as presented as I didn't see many condiments other than those that accompanied the dish. This was emphasized by the discouragement of modifications/substitutions. Phenomenal food! The fingerling potatoes were perfection and bacon steak should be a staple everywhere.

We ordered 8 items to try a variety. The food was good but maybe not worth the ultra high-end price tag. Our server never asked if we were enjoying anything only if we wanted to buy more things. Pasta was perfectly cooked. Tomatoes with stone fruit was very good but again not a $25 dish in my opinion.

Be prepared for a long line even at 8am. This is very much a popular place. Good for a hangout or catch up meal with a good friend. The servers during my visit were a bit apathetic but perhaps you'll have a different experience. Decent food. Love the food presentation. Plan ahead for parking. This a busy area.

We went there for brunch and dinner on two separate occasions. The brunch was simply amazing. You get to choose from a huge spread of unique pastries and choose your seat after you order. The dinner is totally different. It's upscale, sit down experience. The menu changes daily! But if they ever have the 'halo halo' dessert, be sure to order! Absolutely recommend this place!
