Story

Volare Italian Restaurant - A Dream Come True
A native of Matera, Italy, Silvio DiGennaro was a graduate chef before the age of 18. He prepared fine food for upscale restaurants in Italy for nearly a decade before venturing to the United States. While stopping in Houston, Texas, for what he thought would be merely a brief interlude during his American vacation, DiGennaro instead found a new home. Over the next five nears, DiGennaro served a number of fashionable restaurants in the "Bayou City" as a chef, specializing in fine Italian cuisine.

Then in 1997, DiGennaro relocated to Brenham, Texas, and began looking in the city's historical district for just the right spot where he might open his own, exclusive, Italian restaurant. From the moment he peered inside the window of an available downtown property, DiGennaro knew it would be a great location for what would become his Volare Italian Restaurant. But as his business grew, Silvio knew he needed more space, so before long, Volare was "reborn" at a new location on Ross Street, in a beautiful "Salt Box" house that was tastefully transformed inside and out, resulting in a style all its own.

For Silvio DiGennaro, Volare's relocation to its new quarters on Ross Street between Main and Alamo has been a dream come true. With an eight-year reputation for great food and superior service, Volare Italian Restaurant has become a popular dining scene for locals and tourists alike. Its regular patrons include not only residents of Brenham, but those who drive from distant towns and cities in all directions to enjoy the ambience and culinary experience that is unique to Volare.

Silvio DiGennaro says that, "Cooking is an art, a fantasy, a creation that has no limits".

We went early to dinner. It was very quite which was nice. There was a issue with the ice and our water had to be changed. The waiter was very nice and attentive. Our dinner choices were very good.

are you kidding? we have been coming averaging weekly for over 20 years. The freshness, the quality, the friendliness is unparalleled. Silvio, owner and chef is the real deal; his ethic and standards to provide true Italian cuisine at an affordable price have earned him so many loyal customer/friends.

Waitress seemed new but still attentive without hovering. Responded quickly to signal and came just before our sodas were empty. Despite the 'no substitutes' on the holiday menu she did bring my dish without mushrooms, as requested.

Relaxed. Great food. Hospitable service. Egg plant rolls were fantastic! Lasagna super hot, adequate portion, very tasty. House vinagerette was flavorful and not too tangy. Tiramisu and tiny espresso was authentic and worth the 3 hour drive...
