Baked fresh 2x week mon and thurs done around 10am. Decent prices. Pretty stuffy. Open floor bakery with small counter and empty bake racks on Thursday before 5pm. Few packed cookies looked dry with crumbles.

I would like to bring several potential health hazards to your attention concerning Mr. Paul Miller at the Bake Shoppe in Traverse City. Working for Mr. Miller for the past four weeks and I am highly concerned and disgusted with the disregard of sanitation guidelines that goes on in the kitchen of the Bake Shoppe. In the past few weeks there wasn’t a single day that I was there that I didn’t pull expired and often moldy bread from the display shelves, and was told to sell it anyway because “…the expiration was just a suggested sell by date…” There is also incorrect nutritional information on the labels if any nutritional facts labeled at all. Many of the flavored breads including ones with meat, egg, and cheese are under baked and also sold past due date. Mr. Miller also told his employees to use the same plastic gloves all day, and refuses to toss out old product or paper bake sheet liners, using the same liner for multiple kinds of bread. The Bake Shoppe advertises as “fresh” and from “scratch”, but really selling already baked, frozen, defrosted product and using out of a can often expired ingredients. We also did not receive any formal introduction to the kitchen, it’s appliances, how to run or clean them, where or when schedules would be posted, and proper food handling guidelines while we were employed. Mr. Miller has also refused to pay myself and others for the time they’ve worked for him, including our time working for him at the National Cherry Festival. We also had to deal with blatant sexual innuendo’s. Making our time with Mr. Miller uncomfortable, embaressing and unsanitary.
