Excellent Experience. This bakery is tucked tightly into a little corner but well worth a visit.The sandwich board out front offered a gluten-free lunch for just $8.99 so I gave it a try. Tina Nguyen is the owner and welcomed me warmly. She offered a chicken pesto panini w/ a small creamy veggie soup and a tiny cupcake. All glutten-free! She makes everything on site. The bread simply melts in your mouth. Complimentary coffee. The tiny cupcake was the perfect finishing touch. I left but not until I purchased a loaf of fresh glutten-free bread. Bravo!

Banana Blossom Cakes is a small cake/cup cake bakery.  It is owned by a very pleasant woman who makes everything from scratch.  The mini cup cakes are very good.  And she offers so many different types.  Also she can make gluten free if you put an order in.  She also makes the best spring rolls .  You can put an order for these as well.  It is very clean and bright.  You can even eat there if you like and I think she has coffee.
It is some what hard to find.  It is right across the street from Red Lobster on 520 in Merritt Island.  But behind a large buiding that used to be a car dealership.  Next door to a high end used furniture store.

Great chocolate cake. Owner very friendly & worked we me on a last minute order. Would recommend to friends.
