Story

Jack Timmons grew up in Texas and has lived in Seattle for the last 2 decades. In 2012, he attended BBQ Summer Camp at the Meat Sciences department of Texas A&M, then toured many historic barbecue temples of Central Texas. Returning to Seattle, he bought an offset smoker, imported some post oak, mesquite and hickory, and started the Seattle Brisket Experience.
After more than a year of practicing the art of barbecue, and serving old-school, succulent smoked meats to thousands of Northwest BBQ fans at BBQ raves, Jack opened a restaurant in the SoDo region of Seattle – Jack’s BBQ.

Mission

Jack's is based on the BBQ style started in butcher shops in Central Texas in the late 1800’s. Beef and pork with a simple salt and pepper rub, smoked low and slow over hardwoods (post oak, mesquite, hickory, pecan), and served on butcher paper. Sauce is optional, along with pickles and white bread.

So, so amazing.  My husband, his friend and I got a mix of Double Troubles, so we all got to try the brisket, pork ribs, sausage (jalapeno cheddar) and half-chicken.  All of the meats had delicious flavor and were tender and perfectly cooked.  The chicken (even the breast meat) was moist and the brisket had a good smoke ring.

Sides were hit-or-miss.  The beans were awesome and full of tasty bits - tomato, pepper, and onion, possibly some pork or beef also.  The coleslaw and potato salad were just okay.

Drinks were good - try the spicy margarita!  Service was awesome, our server was knowledgable, attentive, and very friendly.

Definitely give this place a try!

Jacks provided the food and catering service for my daughters wedding this weekend at the Trinity Tree Farm and did an outstanding job. The food was amazing. There were compliments about each and every dish from the mac-n-cheese to the Texas Caviar.  The brisket and pulled pork were cooked to perfection and although we had multiple BBQ sauces to accompany, it was certainly not needed! Many compliments from the guests and many thanks from the bride/groom and families for the excellent service as well!

As an East coaster I have grown up around all forms of BBQ. From North Carolina to Texas to Kansas City Style I am no stranger to solid BBQ. I definitely expected Seattle to have its own special brand of barbecue, but what I didn't expect was to have BBQ that was as good as any Central Texas style BBQ. Honestly there brisket is a religious experience. Best wash down with a cold Shiner Bock in true Texan fashion. A lot of times BBQ joints really focus on the meat and the sides are just sort of there. Jack's BBQ has a really awesome variety of sides and all of the sides I have tried for equally delicious.

Service was good, hostess and waitress were friendly and kept the glasses full. Brisket was very moist and tasted great, no sauce necessary. Peppered sausage was pretty good too. Did try the spicy BBQ sauce and it had the perfect amount of spice, sweetness and tang. Will most certainly return.

My wife absolutely loved the food there. Maybe I'm not a Texas barbecue fan or something but I didn't like it at all. Again my wife loved it and people were having a great time and enjoying the food so obviously it's a great place
