Flat Hat Coffee is located at the Museum of Discovery with its own entrance and hours (Free Zone at FCMoD).
Eric got the idea to start a coffee shop while on a trip to Italy visiting family back in 2002. While in Italy, he fell in love with its culture, and how coffee brought people together. Just like his Grandpa, a world war II pilot, Eric took to aviation. He has flown helicopters to offshore oil rigs in the Gulf of Mexico, Tours in the Grand Canyon, and Emergency Medical Services.
On July 4th of 2014, Eric relocated to Ft. Collins, Colorado to take a break from flying and invest in the local community.. On July 21st of 2015, Flat Hat Coffee was born and his original dream of sharing the culture and community of coffee began. His long term goal for the past few years has been to open a coffee shop in a state of the art music venue his friend Randy Torrejon is currently pursuing.
