Story

Originally established in 1871, The Phoenix Saloon was the first bar in Texas to serve women. It had a beer garden with a bell in a tree for service (as it would besmirch a lady's reputation to enter the bar).

There was an alligator pit and badger fights, live music on Saturday nights, and a parrot on a perch inside the front door taught to say “Have you paid your bill!?” in German. In 1894, proprietor of the back room cafe (William Gebhardt) invented chili powder (devising the first process to crush and dry fresh chilis).

Prohibition closed the Phoenix Saloon in 1918 (though for a couple more years the basement served as an illicit brewery, with tunnels cut to run the drink out under the streets of downtown). In 1922, the building was expanded into its present configuration. Turned into a department store (with a refrigerated water fountain that was always proudly nonracial and unsegregated), it remained little changed into the 1990s.

In March 2010 (after 2 years of bruising renovation), the Phoenix rose again as an historic Texas bar, chili parlor and live music venue.

To date, The Phoenix Saloon has been featured on The Food Network and The Travel Channel's 'Food Paradise'. It has also been voted "Best Bar in New Braunfels" and "Best Live Music Venue" in New Braunfels. The Phoenix Saloon has hosted bands such as Black Joe Lewis & The Honeybears, Hayes Carll, Jesse Dayton, The Derailers, Alejandro Escovedo, Fastball, Billy Joe Shaver, Shinyribs, Tejas Brothers, Two Tons of Steel and Dale Watson.

We were in for drinks and burgers around 8pm. They had a girl on stage playing guitar. The performance was wonderful but the acoustics of the saloon are honestly awful, and really took away from her talent. If you're specifically going to see a band, I'd wait for the next venue. The food was good, not excellent like some restaurant/bars are on the square. We ordered chili cheese fries, the blue cheese burger, and the white shirt burger. The chili was great but the chunks of beef instead of ground beef was a little odd to me. Especially when I'm trying to eat my chili cheese fries with my fingers (like a heathen, I know) and I can't get a good bite of all three. The blue cheese burger was kind of dry and my husband said he couldn't taste or see any blue cheese (it's supposed to be stuffed inside), my burger was moist but I ordered a double-shot and it ended up being too spicy for me (oops). I usually like spicy foods but I was under the impression that the chili seasoning had different levels of spicy-ness when really they just threw a bunch of chopped fresh peppers on top of the cheese. Our friends from in town love this place but we tried several other places on the square that we'd rather go to.

Dropped in for lunch, sat at he bar and ordered a chili dog. Waited for 35 minutes, I've seen it much busier and haven't waited that long for a chili dog before. So, asked the bartender, she went to the kitchen, and it appeared they forgot my order. No biggie in general, but when it arrived 5 minutes later, it was sort of dropped in front of me. The the chili dog was hanging off my plate with the chili dripping on the bar. So, lost my appetite for a chili and left. Also, lately the chili has had large, chewy hunks of beef that take forever to chew. Add that to not having a Belgian style beer (personal preference), and there being additional dining choices downtown has put the Phoenix at the bottom of my downtown list.

Just got a plain Phoenix burger with cheese on it and thought they did a very good job with it. The fries had a good seasoning to them and the burger was nice and juicy. Then bun was grilled a little so it was nice in crispy. All n all I would come back here for lunch if I am in the area again.

Great place for live music! Drinks and shots are relatively cheap, so it's a great place to go if you want to have a good time without spending a fortune for the night.

Great food. Live bands. Nice dance floor. Nice downtown new Braunfels location. Excellent service.
