I wanted to love this place. The atmosphere is charming, and the food was flavorful and well prepared. We had the trout and the lemon chicken, and enjoyed some delicious local beers. our server Kirsten was awesome, and gave us great tips for camping in the area. Sadly, what ruined the experience for us was the extremely rude treatment we received from the bus boy with the velvet blazer, and inflated view of himself. For whatever reason, he was clearly displeased by our presence from the beginning. He literally threw my silverware onto the table in front of me after seating us. Its true that we wandered in off of the trail, so maybe we weren't dressed to his standards, but this is a restaurant in the middle of the desert. I would imagine that hikers make up a large portion of your business. I would never spend $100+ to be treated that way, and can not recommend this to anyone. Get over yourself.

After hiking slot canyons all day we stopped in here for dinner. Thoroughly surprised by the menu, staff and food. This is such a great restaurant in all ways. The food is beautifully prepared and presented, the staff is attentive and knowledgeable, and the atmosphere warm and inviting. We will most assuredly return on any visit to the area.

THANKSGIVING 2017 First off, we wish to thank those who waited on us, your service was great and this is in no way meant to reflect on our appreciation of your time and efforts. ========= We were suggested to make a stop at Hells Backbone as part of our journey to enjoy in a thanksgiving meal as part of a family holiday trip. We were promised exquisite dining, and to come with refined pallets and hungry stomachs. We did just that and were informed by several anxious dinners while we waited outside that the food was amazing, and that we would be greatly impressed by what was to come. Although we were willing to just stand outside and wait in the cold, to their credit, there were two small fires placed there by the staff. However they were constantly surrounded by everyone trying to huddle close enough to stay warm; anyone who didn't come early was left to sit in the chilling November wind on hay bails. Not exactly first class even by cowboy standards, but we were hopeful that the food would make up for the oversight and lack of hospitality. After having traveled the world and haven eaten in some of the most well known and incredible restaurants on 5 continents, there were high expectations as we waited for what was promised to be a meal beyond compare. Once we were finally seated, the disappointments began in earnest. The appetizers were not only cold and clashed with combinations of what smelled and appeared to be a confusion of expired vegetables and stale cheese, but left the pallet with an aftertaste that immediately turned ones taste buds on end, leaving one desperately grabbing whatever beverage was closest to dilute and cleanse the taste from your mouth. Following that came a cold soup made from squash and apples that not only looked and smelled far less than appetizing but the taste completed the disappointment and did more to upset the stomach rather than satisfy it. Hoping that perhaps the main course could help the meal to recover, we were treated with continual disappointment as almost every plate that was served was already cold. There was only one protein offered as part of the dinner and the turkey was so horribly dry that in order to eat it, you had to have one of the bowls of gravy nearby in hopes of masking it to help with its consumption. There were numerous vegetable dishes that failed as well, seeming as they were concocted from whatever spices happened to be closest in the cupboard at the time, with an apparent complete disregard to their combination, or dueling flavors. Unfortunately even the macaroni and cheese was dry and less appetizing than a box of .99 cent powdered mix you can grab at a late night grocery store Sadly regretting our decision to come, we were at least mildly appreciative that there were some choices given with the desert offerings which were unique, fresh and charmed the mouth with delightful sensations of sweetness. Although no pumpkin pie on thanksgiving??? Overall, we can only comment that for an exuberantly overpriced $120 a plate, and the anticipations that come from that level of expectation, our dining experience fell dramatically short. To be fair, overall, as disappointing as it was, the meal was perhaps one step above chuck-o-rama due to the great service and friendly staff. However, it is better suited for classification of the expected type of restaurant you find in any other small, deserted town similar to Boulder but with more hype (although we can't understand how or why now from reading other reviews posted about similar experiences there). Coming with anything more than that level of expectation leaves one lamentimg the distance and time lost and the overwhelming feeling that a stop at a drive-through would have provided far more gratification. Granted, a two day old Big Mack slapped together with stale pickles, mustard and second rate ketchup along with some soggy French fries isn't exactly appealing. At least when you go there for a meal however, you know exactly how low to set your expectations and are getting yours moneys worth.

Place was the only place open - It was expensive, but WORTH every penny. My BF & I were scoping for our wedding location this past thanksgiving weekend (Road trip circle from Torrey to Kanab). We ended coming back from Kodachrome basin and ended up in Boulder in pitch dark. Found a cute, charming and cheesy room and made a reservation at Hells backbone grill. It was a casual, yet upscale and full of life (lots of people and chatter). The exterior looked super classy too (well at night). I think it was the white LED Christmas lights. In the day it looked shabby - but it is the end of the season. Hard to believe because it was in the low 70's on the 25th of November. We had the fried (seemed more baked than fried - not an ounce of grease and the perfect amount of crispness & crunch) green tomatoes. We also tried the house salad. It was very unique. Greens, onions, herbs, dried corn, nuts and lots of other goodies tossed with their own balsamic dressing. I had the Thanksgiving meal. Farm raised turkey, fresh potatoes, herbs and overall deliciousness. He had the beef cut of the day, it was the cut of the year! Thick, juicy and lean steak - cut like butter. Seasoned perfect with the local herbs - Broccoli seemed to be picked right out of the garden, little bites of cauliflower too. No wine, only water - it was really the best way to enjoy the meal, with a clean palate. It was a bit odd to have a restaurant with these types of dishes for people who usually bike, hike, ride or are road tripping It was well worth the $ 95.00 before tip ... A perfect ending for a romantic weekend hiking and exploring to find our perfect wedding spot and we found it in red rock country not far away.😍 Highly recommend! ☆☆☆☆☆

Pretentious? Yes. Gourmet? Absolutely not. There is no use for an "upscale menu" in a tiny town that caters to hikers. We hiked 10 miles that day and spent $60 for a dinner that still left us hungry. We paid $26 for a meatloaf that easily could have been a week old and $19 for some dry pasta with very little pesto on it and an added $6 for half a breast of chicken that I know wasn't made to order as it didn't look or taste fresh. We wouldn't mind a fine dining restaurant if we actually got quality food instead of garden pickings and pretentious left-overs.
