Story

La Fuente originated as the brain child of Ana Luisa Hernandez “Cowell” in 1999. Her first location opened January 3rd, 2000 in Fayetteville TN. During this time her Husband Roger worked a fulltime job and worked at the restaurant getting 3-4 hour sleep every night. It was not until 2002 when Roger was able to leave his fulltime job and enter the restaurant business full time with Ana.
In 2004, circumstances occurred that required Ana to have a second restaurant as a backup plan. Pulaski was the obvious choice. Like Fayetteville, Pulaski did not have an authentic decorated Mexican Restaurant. Ana’s desire to change that began by traveling to Patzcuaro Michoacan Mexico where she traveled back roads looking for a family that could build her furniture for the Pulaski restaurant. Unlike the USA where large companies make furniture, in Mexico families will cut the trees, cut the wood, dry the wood, and build the furniture in areas smaller than the restaurant. The same is true with our aluminum patio furniture. It was made of scrap aluminum and hand poured into molds. It does not get more authentic than this.

You can decorate all you want but it comes down to the quality of the food, cleanliness, and employees. There are several grades of food as you probably notice when you shop at groceries store. We purchase the higher grade food from the nation’s largest food provider. It was also important that we are able to track our food purchases back to the producer. It may cost us more not to price shop but not all suppliers can provide the safe guards we demand.

Prior to going with them we visited their warehouse to see that it was well maintained to our standards. It helped that Roger had a background in maintaining the cleanliness of a food processing plant and brings that to La Fuente. We take pride in knowing that we maintain our areas not viewed by our customers to a high standard. We also take pride in how our food is handled and how our equipment is maintained.

Our employees are one of our most valued resources. While other restaurants see employee turnover, most of our employees have been with us for years and have grown to know our customers on a personal level. We like to attribute this to us to not micro managing and hiring responsible employees. Always feel free to practice your Spanish with them. They would love to teach you phrases.
