Ate the best, crispiest crust iron skillet pizza in the world here in 1981!!  Pizza was actually served in a REAL iron skillet that cooked the crust to perfection.  Have searched all over for comparable quality, but never found it.  Fast forward 37 yrs and I find myself back in Knoxville, and through the wonders of the internet, located Stefanos once again;)  The pizza was good, but not the delicacy I remember.  Not an iron skillet, but served in a deep dish aluminum pan that unfortunately, for me, didn't measure up.  The crust was too doughy, but the supreme ingredients were good, just not excellent.  Mystery solved and old saying proven...."you just can't go back, things change."  :(

My wife and I have eaten at Stefano's for years.  The pizza is usually delicious, tonight must have been an off night.  The wheat  crust didn't rise and our garlic was unevenly spread.  We're regulars at Stefanos and we know their pies are usually better than what we had tonight.  We know more Stefanos are opening in the coming year, we're looking forward to visiting the new locations.

Advertised as authentic chicago deep dish. While they make excellent pizza it is not chicago deep dish.

The whole wheat crust was interestingly different and not as tough as it looked to be.  My wife loved the supreme pizza, describing the sauce as among the best she's ever had, but I felt the pizza overall was just a bit too bland or sweet.  Perhaps I just don't have a taste for whole wheat versus plain white crust.  At any rate, this is a decent college-town sort of dark and casual pizza joint.
