Chef Martin is a nutritarian and his restaurant in Aspen reflects it. Organic ingredients prepared in a healthy manner. The food was unusual and delicious.

I found the food to be light, refreshing and flavourful. Someone in my party requested a custom order and they were happy to accommodate that which was nice.
I did find it odd that they added gratuity by default for a party of 3 even though their menu said it would be added for parties of 6 and above. Perhaps it was because they made a custom order for us.

if you are looking for a delicious whole food plant based option in Aspen I would recommend Pyramid any day of the week. A+ all the way around and very fun to walk thru the library to get there.

Delightful staff and a nutrition based menu that will satisfy hunger and give you energy. I am not vegan or gluten free but have much enjoyed gluten free and vegan dishes here and they are awesome. Also very affordable for a dining experience in aspen, the dining room is simple and beautiful.
