It starts attracting the attention of American's palates.
"Sanguche" (Peruvian word for sandwich) started in 2015, as a local and family restaurant, where Cesar, the chef and owner, recreates traditional Peruvian cuisine in a sandwich.
Cesar studied gastronomy at Cordon Bleu Peru and worked 15 years, as Chef in many states in USA, preparing Japanese food, but his dream was to open his own restaurant, combining the difference cultures and dishes from his native country Peru, ancient fusion cuisine because of the diversity of its people, culture and food.
Incas were the first native Peruvian, then Spanish came as part of our conquest chapter, with the Spanish's conquest African population arrived as slaves, later Chinese immigrants replaced the African in agriculture task after the slaves abolition and Peruvian Independence, and later on, Japanese and Italian population arrived to Peru to do business.
All of these chapters of Peruvian history created the enriched and diverse culture of people, traditions and food that now we have in our dishes and Cesar recreates serving in a sandwich too.
